The world-famous gastronomy Mozaic of Ubud, Bali, Indonesia welcomed another world-famous chef from the other side of the world: Chef Michel Portos of Le Saint James Hotel Restaurant in the stunning vineyards of Bordeaux, France. The finely established Le Saint James, which reflects the achievement of Chef Portos’ greatest dream, has received a second Michelin Star for cultivating a superb dining experience that demonstrates exceptionally high standards of service, food preparation, and comfort and beauty within the whole dining aesthetic.
Chef Portos' creative pursuits in gastronomy started only after completing a degree in Economy and upon realizing that such a career could not fulfil his desire to create “with his hands.” And his true passion has inspired some of the most superb and unique food creations in the world, that are inspired from his travels around the world!
Together Chef Chris Salans of Mozaic and Chef Portos have paired together to create a rare opportunity for guests to enjoy a menu as prepared by not one, but two gastromic chefs extraordinaire! For the first-time in Mozaic history, guests are invited to enjoy a unique “four-hand-dinner” as prepared from the cooperation and teamwork of these two extraordinary chefs. The set menu, which many be subject to change, includes optional wine pairing, and includes some of the following selections, which are of Asian-French cuisine: Heart of Caviar, a Steamed Mousse of Scallop, Karat Caviar and Sweet Peas; Fresh Indian Ocean Rock Lobster, A Fresh Kaffir Lime Leaf Reduction, Shaved Fennel and Spiced Almond Salad; and we will save the remainder of the menu for a delightful surprise! These two chefs have cultivated a genuine friendship and together, their unique passion and extraordinary talents are united for a two evening event that is not to be missed! In laughter, both Chris and Michel shared that perfection is born from chaos; from the first chaotic moments that arise in search of the perfect ingredients, but from this chaos comes perfection! It seems this is true for everything in life, but if we hold onto belief, the passionate stirrings of the heart will find ultimately prevail to create the perfect moment, the perfect love, and even the perfect Foie Gras!
